Hearty Maple & Peanut Butter Oatmeal Cookies

Sometimes you just need a tasty cookie to share with your toddler in the middle of a random Wednesday afternoon because it’s the little things in life that really matter! Pepper and I really needed an afternoon “reconnect” after a long morning of big feelings. Making these cookies together really helped change our moods and sitting down to a warm cookie and a glass of fresh milk really was a special bonding time.

One of the things that I like about these cookies is that they are made with a natural sweetener (maple syrup) and are loaded with plenty of fat and fiber to help keep blood sugar in check. I still believe that sweets are a wonderful part of life (for children and adults) but I like to be more mindful with the ingredients I use. These cookies are made with sprouted oats (I like the sprouted oats from One Degree Organic Foods) peanut butter, raisins, and a nice handful of dark chocolate chips for good measure. These cookies are hearty, delicious and the perfect treat to share with your little one. This recipe makes a lot and these cookies freeze really well. I actually prefer eating these straight out of the freezer, but they also store well at room temperature for 4 days.

Hearty Maple & Peanut Butter Oatmeal Cookies

PREP TIME: 15 MINUTES    COOK TIME: 12 MINUTES    SERVES: 35 COOKIES

  • 2 3/4 cups old fashioned rolled oats

  • 2/3 cup natural peanut butter

  • 1/2 cup real maple syrup

  • 4 Tablespoons unsalted butter, melted

  • 1 large egg

  • 2 teaspoons vanilla extract

  • 3/4 teaspoon baking soda

  • 1/2 teaspoon unrefined salt

  • 1 teaspoon cinnamon

  • 1 cup raisins

  • 1 cup dark chocolate chips

Preparation

  1. Preheat the oven to 350F and line 2 baking sheets with parchment paper.

  2. Place 1 1/4 cups of the oats into a food processor or blender and process until finely ground into a flour like consistency.

  3. In a large bowl combine the peanut butter, maple syrup and melted butter together. Add the egg and vanilla extract and mix until well combined.

  4. Add the baking soda, salt, cinnamon, ground oats, and remaining rolled oats to the bowl. Mix well. Fold in the raisins and chocolate chips.

  5. Drop the dough by the Tablespoon onto your prepared baking sheets. Bake in the oven until golden brown on the bottom and cooked through. about 12-14 minutes.

Notes

*Cooking times will very from kitchen to kitchen. Store cookies at room temperature for 3-4 days or freeze for up to 4 months.
