Creamy Sausage Gnocchi

Every once in a while I want to jump for joy when a recipe is a complete home run for the entire family. My toddler went back for thirds (this is not typical) and she ate every component of this meal. She loved the broccoli, could not get enough of the gnocchi, and my girl has always been a sausage fan so that wasn’t a surprise. However, more times than not, when we serve a one pan meal my girl will often pick a few things out. She’s not a fan of peppers (even though her name is Pepper!) and even when she loves certain veggies she’s not always a fan of them mixed into a one pot meal. This wasn’t the case here and she went to town! My husband and I loved this meal just as much which means this will be on repeat again next week. We have been meal planning recently and I wrote down this meal for next Thursday and Pepper is already excited.

This recipe could not be easier to whip up on a busy night. It is on the table in less than 30 minutes and calls for very basic ingredients. It is a wholesome meal that I feel really good about serving my growing toddler. Between the nourishing cream sauce (which includes bone broth, cream, and tomato paste) mineral and protein rich sausage, and fiber rich gnocchi this meal fits the bill as a healthy dinner in my book.

Creamy Sausage Gnocchi

PREP TIME: 10 minutes    COOK TIME: 20 MINUTES    SERVES: 6

  • 1 package of your favorite gnocchi (we used Cappello's grain free gnocchi)

  • 1 1/2 cups chopped broccoli florets

  • 1 pound Italian sausage

  • 3 Tablespoons tomato paste

  • 1/2 cup heavy cream

  • 1/2 cup chicken bone broth (or stock)

  • salt and pepper to taste

  • 1/2 cup freshly grated cheddar cheese

Preparation

  1. Preheat the oven to 350F.

  2. Cook the gnocchi according to package directions. Drain and set aside.

  3. Steam the broccoli in a pot of boiling water until just tender, about 3-4 minutes. Drain and set aside with the gnocchi.

  4. Heat a large cast iron skillet over medium high heat. Add the sausage and use a wooden spoon to break up the meat a bit. Cook until it's no longer pink and slightly browned. Add the tomatoe paste and stir to coat the meat in the mixture. Add the cream and chicken broth and season with salt and pepper. Bring to a low simmer. Add the reserved gnocchi and broccoli. Stir everything until well combined. Remove from the heat, add the cheese and place the pan in the oven. Cook for about 12 minutes or until the mixture is bubbling and the cheese is melted.

  5. Serve warm!
