Strawberry & Date Blondies

We’ve had a lot of little celebrations recently which have called for special treats that are toddler friendly and easy to transport. These strawberry and date blondies fit the bill. They are not only easy to whip up with only a handful of ingredients, but they are flourless, refined sugar free, and perfect for every age group. One bowl and your favorite kitchen assistant is all you need!

These blondies were inspired by my flourless chocolate zucchini brownies. Those brownies were such a hit that I wanted to experiment with a non chocolate version. Feel free to swap out the strawberries for any summer berry that’s available to you.

Strawberry & Date Blondies

PREP TIME: 15 MINUTES    COOK TIME: 30 MINUTES    SERVES: 16 BROWNIES

  • 1 cup Medjool dates (about 9-10 large dates)

  • 1 cup unsalted cashew butter (can substitute almond butter)

  • 2 teaspoons vanilla extract

  • 1/4 teaspoon unrefined salt

  • 1 teaspoon ground cinnamon

  • 3/4 teaspoon baking soda

  • 2 eggs, whisked

  • 1 cup chopped strawberries

Preparation

  1. Preheat the oven to 350F and grease an 8X8 baking dish with coconut oil or ghee.

  2. Soak the dates in a bowl of boiling water for 5 minutes to really soften them up.

  3. Add the soaked dates to a high speed blender or food processor along with 1/4 cup of the soaking liquid. Blend until a smooth paste forms (adding more liquid if needed).

  4. In a large bowl combine the date paste along with the remainder of the ingredients (minus the strawberries).

  5. Fold in the strawberries and then spoon the mixture into the prepared pan.

  6. Bake in the oven for 25-30 minutes or until a toothpick comes out almost clean.

  7. Allow brownies to completely cool before slicing and enjoying
