Strawberry Smoothie Bowl
This thick and creamy strawberry smoothie bowl tastes like a luxurious dessert but is chock full of nourishing ingredients. It has a nice balance of sweet and tangy thanks to the Greek yogurt and sweet strawberries. The Greek yogurt added almost 20 grams of protein to this bowl which is wonderful because I like to start my kid’s day off with plenty of protein to keep their blood sugar stable and their tummies full. With the addition of some grain free granola (which was loaded with nuts and seeds) there was even more protein included.
My kids had fun making this smoothie bowl with me. They didn’t want to add the granola until they had eaten the “pig garnishes” first because they didn’t want to ruin it right away.

Strawberry Smoothie Bowl
PREP TIME: 5 minutes COOK TIME: 0 minutes SERVES: 2 small servings
2 heaping cups frozen strawberries (if making the pig reserve two strawberries for slicing)
1 cup whole milk Greek yogurt
1 large Medjool date, pit removed and finely chopped
Preparation
Place all the ingredients into a high speed blender and blend until smooth and creamy. This will take a while because there is no liquid. Scrape down the sides as needed and keep blending until things get moving. If needed add a touch of water or milk.
Divide between two bowls a garnish as you’d like!
