Tomato & Cucumber Ranch Salad
This is the first “real” salad I’ve been able to get my kid’s to eat! They both love tomatoes and cucumbers and homemade ranch is their favorite condiment at the moment so I had a lot going in my favor in that department. The kicker was to see if they would actually enjoy this all mixed together in a bowl like a “real” salad. To my surprise (and absolute delight!) both my kids loved this salad!
If your kids enjoy cherry tomatoes and cucumbers I think making this summertime salad is a must for you! It’s great served alongside chicken, fish or steak for a simple dinner. The homemade ranch dressing is SO easy to make and is simply divine.

Tomato & Cucumber Ranch Salad
Prep Time: 15 minutes Serves: 4 as a side
Ranch Dressing
1/2 cup whole milk Greek yogurt
1/2 cup avocado oil mayo (homemade is best here)
2 teaspoons honey or maple syrup
1/4 cup minced fresh dill (or 2 tablespoons dried)
2 Tablespoons apple cider vinegar
1/4 teaspoon unrefined salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
fresh black pepper to taste
Salad:
1 large cucumber, peeled in cut into 1/4 inch thick rounds and then sliced in half
1 pint cherry tomatoes, sliced in half
Preparation
Whisk together all the ingredients for the ranch dressing. Taste for seasonings and adjust as needed.
Add the veggies to a large bowl. Drizzle with half the dressing and serve. If needed add more dressing to taste.
Store extra dressing in the fridge for 5 days.
