Lamb & Beet Curry Meatballs

Folks- If you are looking for the best tasting meatball around look no further. These lamb, beet and curry meatballs are AMAZING! We have made them three times over the last few weeks and every time they are met with so much enthusiasm from our kiddos! If you don’t have access to good quality lamb you can make these with beef instead. This is a great recipe to whip up if you have a small baby who is just starting solids as these make for a great food for baby-led weaning. They are chock full of nutrients thanks to the lamb which is full of important amino acids along with protein and iron for growing children. The beets add a lovely flavor (and color!) along with plenty of vitamins and minerals. I even tossed in some beet greens for added nutrition and the greens went completely unnoticed by my kids! The curry flavor is absolutely lovely and not overpowering at all. We dipped our meatballs in a simple mixture of plain Greek yogurt with a little lemon juice and sea salt. Serve these as is or with. a side of rice and grilled veggies for a complete meal.

I hope you and your kids love these meatballs as much as we do. Serve them up at your next potluck gathering or for a simple weeknight meal.
