Mango-Coconut Popsicles

If you are looking for a sweet, cooling summer treat for your kiddos look no further! These mango-coconut popsicles are so darn delicious and cold not be easier to whip up. I bought some stainless steel popsicle molds last summer and totally forgot about them. Now that I have dusted them off we have been making popsicles every few days. Seriously, these could not be easier to make and they are jam packed with nourishing ingredients. I love that they are naturally sweetened with fruit and contain plenty of nourishing fat thanks to a hefty dollop of coconut butter. These beat store-bought popsicles in both flavor and price tag. The other major bonus- these are fun to make with your toddler or young kiddo. Dump all the ingredients into your high speed blender and whirl away. Then pour the liquid into the popsicle molds and pop them into the freezer (that’s the hardest part- waiting for them to cool down!)

Both of my girls loved these popsicles so much! And because there wasn’t any added sweetener I happily served this to my 11-month old. These are totally awesome and I hope you all enjoy them as much as we do!

A few tips on the popsicles. I love using the stainless steel molds because they’re less toxic than plastic molds. You just run the metal under warm water for a few seconds and then the popsicle slides right out.

Feel free to swap out ingredients to what you have. I loved the addition of the coconut butter for both flavor, texture and nutrition. A jar of coconut butter will last a long time and I think is worth the price. You can swap the mango for any fruit like pineapple, papaya, melon, or any sweet berry. I think the coconut goes with all of those fruits really well so go wild!

Mango-Coconut Popsicles

PREP TIME: 5 MINUTES    FREEZER TIME: 4-8 hours SERVES: 6 Popsicles

  • 2 heaping cups frozen mango chunks

  • 1 large banana

  • 1/4 cup coconut butter

  • 1 cup of water

Preparation

  1. Place all the ingredients into a high speed blender and whirl away until smooth and creamy. Add a little more water if need be.

  2. Pour the mixture into individual popsicle molds and freeze for at least 4 hours if not overnight.

  3. If using stainless steel molds run a little warm water over the mold and then gently pull the popsicle out.
