Simple White Bean & Ham Soup

We’re getting quite the storm in our neck of the woods and these snowy evenings call for comforting and cozy soups! This soup was both baby and toddler approved by my kids and my husband and I went back for seconds. This soup tasted even better as leftovers the following day for lunch and I am so happy to have a family favorite soup for these cold months ahead.

Things that I love about this soup are number one— it’s high in protein! I love prioritizing protein in my kids’s meals and this soup fits the bill. Number two- It’s jam packed with veggies that my kids will actually eat. They both love carrots and celery which makes this meal even easier to please their little palates. Three— I found a really lovely ham steak from North Country Smokehouse that doesn’t contain any crap ingredients (which can be tough to find when it comes to cured ham steak!) I love having these hams on hand for quick easy meals like this one and I highly recommend them for you all as well!

Anyhow, I hope you all enjoy this meal as much as my family does. It could not be easier to whip up and tastes extra good with hunks of sourdough bread dunked in!

Simple White Bean & Ham Soup

PREP TIME: 15 minutes    COOK TIME: 30 minutes    SERVES: 6-8

  • 2 Tablespoons ghee or butter

  • 1 yellow onion, finely chopped

  • 2 celery stalks, finely chopped

  • 2 large carrots, finely chopped

  • 4 cloves of garlic, minced

  • 2 teaspoons dried thyme

  • fat pinch of salt

  • 4 cups chicken bone broth or stock

  • 2 (15 ounce) jars of Navy Beans (or any white bean) drained

  • 1 pound ham steak, cut into small cubes

  • Salt and pepper to taste

Preparation

  1. Heat the ghee in a large dutch oven over medium high heat. Once hot add the onion and cook, stirring occasionally for about 5 minutes. Add the celery, carrots, garlic, thyme and salt. Cook, stirring to coat the veggies in the thyme/salt.

  2. Pour in the chicken bone broth and bring to a low boil. Reduce the heat to a simmer, add the white beans and the cubed ham. Cook until the veggies are tender. About 30 minutes.

  3. Season to taste with salt and pepper and serve.
