Chicken Peanut Satay on Lolly Sticks

When I was growing up I loved meat on a stick! I can’t believe I haven’t gotten on the bandwagon with my kids yet. With grilling season here I thought this would be a fun and easy recipe to have in my back pocket for the months ahead. My girls loved this recipe and especially loved the peanut dipping sauce. This is a great recipe to serve alongside steamed or grilled veggies and your favorite grain.

At one point I caught my youngest daughter using a spoon to “sip” her sauce! This sauce would be great on salmon, steak or tofu. I even used it as a “dressing” for a kale slaw for our CSA members last week. Check that recipe out here!

Chicken Peanut Satay on Lolly Sticks

PREP TIME: 15 minutes    COOK TIME: 20 minutes    SERVES: 6

Peanut Sauce

  • 1/2 cup creamy peanut butter (unsweetened)

  • 1/4 cup coconut aminos (or sub reduce sodium soy sauce)

  • 3 Tablespoons apple cider vinegar

  • 1 1/2 Tablespoons pure maple syrup

  • 1 Tablespoon sesame oil

  • 1 teaspoon fish sauce

  • 2 teaspoons finely grated fresh ginger

  • 1 clove of garlic, minced

  • 1/4 teaspoon crushed red pepper flakes

  • water to thin as needed

Chicken:

  • 2 chicken breast, cut into 18 chunks

  • 1/4 cup coconut aminos

Preparation

  1. Preheat the grill to medium-high heat.

  2. Make the peanut sauce by combining all the ingredients together in a small blender or use an emersion blender. Blend until smooth adding water to thin as necessary. Taste for seasonings and adjust as needed.

  3. Feed the chicken chunks onto lolly sticks. Place them on a baking sheet and drizzle them with coconut aminos. Let them marinate for about 15 minutes.

  4. Cook the chicken on the grill for about 5-6 minutes per side or until the chicken is cooked through.

  5. Serve with the peanut sauce and enjoy.
