Maple Mustard Salmon

It you are trying to incorporate more salmon into your families diet this is the recipe for you! My oldest daughter has loved salmon since infancy and my youngest isn’t quite sure about salmon yet. I make salmon once a week and it’s hit or miss with my youngest. However, this salmon recipe she could not stop eating! It was a major win and I think it’s all thanks to that lovely sweet and savory maple mustard glaze. It may have taken something a little sweet to get her to eat her salmon but I don’t care! She still got all of those amazing vitamins, minerals, omega-3’s, protein and antioxidants (in the maple syrup) to balance out this tasty fish dish! I will for sure be making this recipe again and I hope you all enjoy this simple meal as much as we did.

I served this with a side of steamed peas and butter (butter is a superfood in this household—read all about the benefits of butter in Sally Fallon’s book Nourishing Traditions) and some “cheesy” millet. I opt for millet over rice only because rice tends to be high in arsenic (even organic rice) and millet feels like a better choice with the most similar flavor and texture. We love the sprouted millet from Second Spring!

Maple Mustard Baked Salmon

PREP TIME: 10 minutes    COOK TIME: 20 minutes    SERVES: 4-6

  • 2 pounds salmon

  • 2 Tablespoons Dijon style mustard

  • 2 Tablespoons pure maple syrup

  • 1/2 teaspoon paprika

  • 1/2 teaspoon unrefined salt

  • fresh cracked pepper

  • 1 teaspoon extra virgin olive oil

Preparation

  1. Preheat the oven to 375F.

  2. Place the salmon on a baking sheet and set aside.

  3. Meanwhile prepare the sauce by combining the rest of the ingredients in a bowl and whisk until smooth. Drizzle half of the sauce over the salmon and use your hands to rub it in. Bake the salmon for 15 minutes and then remove it from the oven. Drizzle the remainder of the sauce over the salmon and continue to cook until the salmon is just cooked through, about 3-7 minutes longer depending on the thickness of your salmon. The internal temperature should be about 145F.

  4. Serve with your favorite side dishes!
