One-Pot Orzo with Sausage, Spinach & Edamame

This recipe is for all of you busy parents out there that only have 20 minutes to get dinner on the table. Not only is this recipe a breeze to prepare, but it is chock full of flavor and a ton of nutrition. Both of my girls love the texture of orzo (the tiny rice like pasta) and when it’s paired with savory Italian sausage, sweet edamame, and a little spinach for good measure (if your kid detests spinach you can serve the spinach on the side for them) it makes for a home-run of a meal.

We have spinach coming out of our ears here at our farm and I think this is an easy and tasty way to add a bit more flavor and nutrition to a meal. We added some local ground Italian sausage and frozen edamame for extra protein and stirred everything together in one pot. This really is an easy, filling and delicious meal the whole family will love!

Full disclosure- my toddler picked the spinach out of her pasta but enjoyed the the rest of the meal. My 11-month old ate ever last bite! I am still a firm believe that exposure to different foods is key. The more familiar your child becomes with seeing certain foods on their plate the better chance you have of them eventually trying it. It’s also important to remember kids go through stages. Pepper used to eat spinach (in soup or ground up into muffins) but now she is exercising her autonomy and chooses to not eat it right now. That’s totally fine with me. I know she’ll come around. I will continue to serve it and let her make the choice to either put it in her mouth or not. So don’t sweat it if your kid picks out certain ingredients from their meal— the fact that they see you enjoying it is a great start.

One-Pot Orzo with Sausage, Spinach & Edamame

PREP TIME: 15 MINUTES    COOK TIME: 15 MINUTES    SERVES: 6

  • 1 lb Italian sausage

  • 1 small yellow onion, diced

  • 1 cup dry orzo (we like the cassava orzo from Jovial Foods)

  • 3 cups chicken bone broth

  • 1 cup frozen edamame (or peas)

  • 3 cups finely chopped spinach (loosely packed)

  • 1/4 cup finely grated parmesan cheese

Preparation

  1. In a large dutch oven over medium-high heat brown the sausage using a wooden spoon to break up the meat a bit. Add the diced onion and continue to cook for about 3 minutes or until the sausage is cooked through and the onion is tender.

  2. Add the orzo and chicken bone broth and bring to a boil. Reduce the heat to medium-low and add in the edamame. Cook for 10 minutes, using a wooden spoon to stir the mixture every few minutes to ensure the orzo doesn’t stick to the bottom of the pan.

  3. Remove from the heat and stir in the spinach and parmesan cheese.

  4. Serve warm
