Toddler Approved Hummus

Lunches often time look like this at our house. When I’m too busy or haven’t planned out a proper lunch we resort to “snack lunch” which both of my kids LOVE! One thing I’ve tried to be good about weekly is having a fresh batch of hummus in the fridge because both of my kids will eat it (at least at the moment! This could change in a day or two!!) But for now we are loving this homemade hummus that we dip veggies, crackers and even spread onto sourdough toast. And when it comes to “snack lunch” I love that this hummus contains plant based protein and fiber. We try and serve it with some local cured meats, veggies, sauerkraut, and sometimes a few hard boiled eggs on the side for added protein and nutrients.

Toddler Approved Hummus

PREP TIME: 10 minutes    COOK TIME: 0 minutes    SERVES: 8

  • 1 1/2 cups cooked chickpeas (if from the can rinsed and drained)

  • 1/3 cup tahini (I like the Soom Brand for it’s amazing consistency)

  • 2 Tablespoons extra virgin olive oil

  • 2 Tablespoons fresh lemon juice

  • 1 clove of garlic, minced

  • 1/2 teaspoon unrefined sea salt

  • 5 Tablespoons cold water

Preparation

  1. Place all the ingredients into a high speed blender and whirl away until smooth and creamy. Add a touch more water if needed to get it to your desired consistency.

  2. Store in the fridge for 7 days.
