High Protein Cottage Cheese Chocolate Pudding

I don’t know where I’ve been, but why haven’t I been serving my children more cottage cheese? It’s so darn delicious and packed with an array of bio available nutrients that I feel their little bodies need to thrive. In all the research I’ve done studying childhood nutrition I’ve found that animal protein is superior to plant protein when it comes to nourishing little growing bodies.

This pudding is a great example of elevating a “dessert” into a wholesome treat that I feel totally good about serving my kids on a regular basis. It won’t cause a sugar crash thanks to the fat, protein and natural sweetener. Not to mention, it’s so darn easy to whip up that you’ll be proud to have this on the table in less than 5 minutes!

You’ll only need 5 simple ingredients to make this pudding and I can’t wait to hear how your kids like this! Serve it plain or add some toppings like we do. Below we used dark chocolate chips, goji berries and shredded coconut for good measure.

High Protein Cottage Cheese Chocolate Pudding

PREP TIME: 5 minutes    COOK TIME: 0 minutes    SERVES: 4-6 small servings

  • 2 cups full fat cottage cheese

  • 1/4 cup whole milk

  • 1/4 cup unsalted peanut butter or almond butter

  • 2 Tablespoons maple syrup (plus more to taste if needed)

  • 2 Tablespoons cacao powder

  • pinch of salt

Optinoal ingredeints:

  • cinnamon

  • 1/2 teaspoon of chaga mushroom powder

  • vanilla extract

Preparation

  1. Place all the ingredients into a blender, food processor or use an immersion blender and blend until smooth and creamy. Taste test and adjust as needed.

  2. Store in the fridge for up to 5 days.
