Kid Friendly Carrot Salad
I get ridiculously excited about recipes like this. Ones that highlight veggies from our family farm and more important, recipes my kids like! I can’t believe I got both of my girls to try (yes there was a little coaxing to get my youngest to eat this) but after those first bites, the rest was history.
This is a new favorite salad for my husband and me too. We have a lot of overwintered carrots in our fields and we’ve roasted our way into boredom. My family needed a new way to enjoy carrots fresh from the ground and this creamy, carrot and raisin salad hit the spot. It’s similar in taste and texture to coleslaw but with healthier ingredients and more flavor.
This is the kind of salad that can accompany so many different kinds of meals. Roasted chicken, grilled steak, poached salmon, bbq platter, or simply eaten on its own as a mid afternoon snack. It’s so stinking good!
I hope you and your family give this salad a try. Fresh carrots should start popping up at farmers markets around the country soon (our spring carrots are looking good so far) but for now overwintered carrots are what’s making this salad possible in our home.

Kid Friendly Carrot Salad
PREP TIME: 10 minutes COOK TIME: 0 minutes SERVES: 6
1/4 cup Greek yogurt
1/4 cup mayonnaise (homemade is best!)
1 Tablespoon lemon juice
1 Tablespoon pure maple syrup
fat pinch of salt
4 cups shredded carrots
1 cup raisins
1/2 cup sunflower or pumpkin seeds (or finely chopped nuts)
Preparation
In a large serving bowl mix together the Greek yogurt, mayo, lemon juice, maple syrup and salt. Taste for seasonings and adjust if needed. Add in the carrots, raisins, and seeds. Toss together and serve.
NOTES- This salad tastes great at room temperature or chilled. Store in the fridge for 4 days.
